Ingredients 1 teaspoon butter 1 medium onion, sliced 1/4 cup (about 1 1/2 ounces) finely chopped pitted dried plums 1 tablespoon Dijon mustard 4 ounces Gruy่re cheese, thinly sliced 4 slices light rye bread No-stick cooking sprayPreparationIn large nonstick skillet, melt butter over medium-high heat. Add onion; cook and stir 10 minutes or until golden brown in color. Add dried plums and continue to cook until heated through. Remove from heat; stir in mustard. To assemble sandwiches, layer 1/2 of onions and 2 ounces cheese evenly on two slices of bread; close with second slice of bread. Generously spray outside of both sandwiches with cooking spray. Heat large nonstick skillet over medium-high heat. Cover. Cook approximately 2 minutes on each side or until bread is light brown and cheese has melted.
