CHERRY AND CHICKEN PASTA SALAD
This tasty main course offers a nutritious option for lunch or dinner.
Makes 6 servings (about 1 cup each).
3 cups cooked whole wheat penne pasta 2 cups cooked cubed chicken breast 3/4 cup dried tart cherries 1/2 cup chopped celery 3 tablespoons chopped fresh basil 2 tablespoons sliced green onion 1/2 cup bottled balsamic vinaigrette salad dressing 1/3 cup chopped toasted pecans
Combine pasta, chicken, cherries, celery, basil and green onion in medium size bowl.
Toss gently with salad dressing until all ingredients are lightly coated.
Refrigerate, covered, 2 to 3 hours to allow flavors to blend.
Sprinkle with pecans just before serving.
