CARNIVAL CHICKEN RICE SALAD
Yield: Makes 6 servings.
Ingredients • 3 cups cooked brown rice, cooled to room temperature • 1 cup cooked pinto beans • 1 cup chopped fresh tomato • 1 cup cooked chicken cubes • 1 cup (4 ounces) shredded Cheddar or American cheese • 1 tablespoon chopped fresh parsley • 1/2 teaspoon salt • 1/4 teaspoon ground black pepper • 1/3 cup prepared Italian dressing • Lettuce leaves (optional)
Directions Combine rice, beans, tomato, chicken, cheese, parsley, salt and pepper in large bowl.
Pour dressing over rice mixture; toss lightly.
Serve on lettuce leaves, if desired.
