CARAMBOLA (STARFRUIT) CHICKEN SALAD WITH ORIENTAL MANGO DRESSING
Serves 8-10
Chicken Salad • Five 8 oz Chicken Breasts (boneless) • 4 Florida Starfruit (Sliced) • 2 Florida Sweet Peppers (Red or Yellow) (Roasted, Peeled, and Sliced) • 10 Cups Florida Lettuce Greens
Oriental Mango Dressing • 2 Tsp. Fresh Florida Garlic (Minced) • 2 Tsp. Fresh Florida Ginger (Minced) • 1 Tsp. Florida Jalapeno Pepper (Minced) • 2 Tbsp. Fresh Florida Cilantro (Chopped) • 2 Tbsp. Fresh Florida Basil (Chopped) • 2 Tsp. Florida Sugar • 2 Tbsp. Florida Lime Juice • 2 Cups Rice Wine Vinegar
• 2 Tbsp. Sesame Oil • 1 Cup Canola Oil • 2 Cups Florida Mango (Diced Medium) • Salt & Pepper to Taste
Method: Grill chicken breast, cool and slice into strips.
Place lettuce greens in the center of a large plate or platter and alternate; placing chicken strips, roasted peppers, and starfruit slices around the greens.
Dressing: Combine first 8 ingredients in a bowl and slowly whisk in sesame and canola oil.
Add diced Mango and spoon over the top of salad.
