CHICORY AND DAIKON SALAD WITH PEAR DRESSING

Salad 4 Whole Chicory Greens 1 Each Daikon -- 6" piece
Pear Dressing 1/2 Whole Pear, Ripe 1 Teaspoon Lemon Juice 1 Tablespoon Safflower Oil Salt And Pepper -- to taste
[1) Peel Daikon with vegetable peeler. Using vegetable peeler, slice the Daikon into long thin ribbons. Combine with Chicory.
[2) DRESSING: Puree pear, add lemon juice and oil & salt & pepper.
Toss with salad right before service.
