CHICKEN SALAD VERONIQUE
Yield: Makes 4 servings.
Ingredients • 2 cups cooked rice, cooled • 2 cups cubed cooked chicken • 1 cup seedless green grapes, halved • 1/2 cup sliced celery • 1/4 cup sliced green onions • 1/2 cup sour cream • 1/2 cup mayonnaise • 1 teaspoon Dijon-style mustard • 1/2 teaspoon celery salt • 2 tablespoons dry white wine • 1/4 cup slivered almonds, toasted
Directions Combine rice, chicken, grapes, celery and green onions.
Blend sour cream, mayonnaise, mustard, celery salt and wine. Pour over rice mixture and toss lightly.
Serve on salad greens, if desired.
