AVOCADO, CHICKEN & RICE SALAD
Yield: Makes 8 servings.
Ingredients • 3 cups cooked rice • 1 1/2 to 2 cups cooked chicken cubes • 1 cup sliced celery • 1/2 cup diced cooked ham • 1/4 cup sliced ripe olives • 1 tablespoon minced onion • 3/4 to 1 cup mayonnaise • 4 avocados • 2 tablespoons lemon juice • Mayonnaise (optional)
Directions Combine rice, chicken, celery, ham, olives, onion and mayonnaise in large bowl; toss lightly. Chill.
Cut avocados in half, seed, and peel; brush with lemon juice.
Spoon salad into avocado halves.
