February 25, 2017  Mumbo Jumbo Gumbo Cook-Off
Manitou Springs, Colorado
Experience Mardi-Gras and Cajun cuisine in Manitou! Enjoy samples of gumbo from professional chefs and amateur cooks to help determine who has the best gumbo! Gumbo is a Cajun soup that contains roux and dried sassafras. It also usually contains a variety of meats such as chicken, seafood, or sausage. Okra and other ingredients along with seasonings and sometimes even rice can  be found in gumbo as well.   Join us at Soda Springs Park from 10:30am till 1:00pm for an afternoon of gumbo and Mardi-Gras! Two samples of gumbo will be available for $1.00. The amateur and professional divisions will compete for their own 1st, 2nd, and 3rd place trophies as well as for cash prizes. There will also be an award for Best Showmanship and People’s Choice.  Stick around after the Gumbo Cook-Off when Manitou Avenue will fill up with spectators to watch the Mardi-Gras Parade at 1:00pm. Get into the Mardi-Gras spirit and enjoy a Cajun tradition.  During each event, guests and notable judges will vote for the best bite from over 1,200 pounds of heritage pork. The winner is then crowned the “Prince or Princess of Porc” and guaranteed a slot at Grand Cochon in October.  The Sunday afternoon event unites diners with farmers, winemakers, craft brewers, and distillers in a culinary showdown with a singular focus: ensuring a safe, honest, and delicious future for our food system and the children who will inherit it.  Ensuring a future of safe, honest, and delicious food will be the dominant theme of this year’s tour. In support of this, Cochon555 will donate a portion of all proceeds to its sister charity, Piggy Bank. This nonprofit foundation is a genetic sanctuary and Missouri farm established to provide free genetics to emerging family farmers.
