April 29, 2018 Cochon555
The Cochon555 US Tour executes a yearly host of authentic, hyper-local food events focused on raising awareness for heritage breed pigs. Five chefs will prepare five, whole heritage breed pigs from family farms, and each chef will have one week to prepare 6 portions for 450+ guests. During each event, guests and notable judges will vote for the best bite from over 1,500 pounds of heritage pork. The winner is then crowned the “Prince or Princess of Porc” and guaranteed a slot at Grand Cochon in October. The Sunday afternoon event unites diners with farmers, winemakers, craft brewers, and distillers in a culinary showdown with a singular focus: ensuring a safe, honest, and delicious future for our food system and the children who will inherit it. Ensuring a future of safe, honest, and delicious food will be the dominant theme of this year’s tour. In support of this, Cochon555 will donate a portion of all proceeds to its sister charity, Piggy Bank. This nonprofit foundation is a genetic sanctuary and Missouri farm established to provide free genetics to emerging family farmers.
