MADEIRA SAUCE

Serves 4

Ingredients
• 3 tablespoons olive oil
• 1 small onion, thinly sliced
• 1 tablespoon all-purpose flour
• 1 cup water mixed with 1/2 teaspoon meat extract, or Maggi Seasoning
• 2/3 cup Madeira wine
• 1 1/2 tablespoons butter
• salt


Directions
Heat the oil in a pan.

Add the onion and cook over low heat stirring occasionally for about 7 minutes until lightly browned.

Stir in the flour then gradually stir in the water with the meat extract or Maggi Seasoning a little at a time. When incorporated gradually stir in the Madeira. Simmer gently for 10 minutes.

Strain through a coarse strainer into a clean pan and reheat.

Season with salt if necessary (bearing in mind that the meat extract and Maggi Seasoning are salty).

Just before serving remove the pan from the heat and whisk in the butter.

Serve with cured ham and spinach.
