WHALE INN HOUSE DRESSING

Description: House Dressing for Whale Inn, Colorado Springs
Recipe By: Chef James
Servings: 18 - 2 ounce portions
Yield:  6 Cups

2 Whole Eggs
1 Quart Salad Oil
                      
1/2 cup Cider Vinegar
1/4 cup Lemon Juice
1 Tablespoon Dry Mustard
1/2 Tablespoon Sugar
1/4 Tablespoon Granulated Garlic
1/4 Teaspoon White Pepper
1/4 Tablespoon Salt
1/2 Teaspoon Thyme
1 Dash Nutmeg
1/4 cup Chives -- chopped


[1) Beat Eggs till frothy.....Add Oil slowly, beating constantly.

[2) Combine remaining ingredients and add to dressing.
