Ingredients • 2 medium tomatoes, diced into 1/4 inch cubes • 1 lemon, juice and zest • 1 shallot, peeled and finely chopped • 2 garlic cloves, peeled and finely chopped • 6 tablespoons extra virgin olive oil • salt to taste • freshly ground black pepper to taste
