GOURMET SPICY TOFU DIP

Gary Null's Power Foods: The 15 Best Foods for Your Health
by Gary Null Ph.D.


Makes 2 1/2 To 3 Cups.


Ingredients
• 2 cups silken tofu
• 2 tablespoons fresh basil, chopped
• 2 tablespoons fresh parsley, chopped
• 1/2 cup vegan mayonnaise
• 3 tablespoons prepared mustard.
• 2 tablespoons apple cider vinegar
• 1 teaspoon balsamic vinegar
• 1/4 teaspoon lemon juice
• 1/4 teaspoon cayenne
• 3 teaspoons salt
• 3/4 teaspoon black pepper, freshly ground
• paprika, as garnish


Directions
1.
In a blender or food processor, combine tofu, basil, parsley, mayonnaise, mustard, cider vinegar, balsamic vinegar, lemon juice, cayenne, salt, and pepper, and blend until smooth.

2. Chill before serving.

3. Sprinkle with paprika, and serve with raw carrot and celery sticks, and broccoli and cauliflower florets.
