1/2 cup flour
1 teaspoon baking powder
3/4 teaspoon salt
3 cups shredded mozzarella cheese
1½ cups cottage cheese
3/4 pound spicy pork sausage, cooked and crumbled
In a large bowl, beat eggs, add flour, baking powder and salt.
Fold in remaining ingredients.
Turn into a greased 9x9x2-inch baking dish.
Bake in a 350 degree F. oven for 40 minutes.
Remove from oven; let stand 10 minutes.
Cut into small squares; serve warm.
A lifesaver when a crowd arrives—these take minutes to stir together and make a lot. This recipe can be successfully doubled—bake in a 13x9-inch pan; increase baking time to 45-50 minutes.
