BEEF SALAD PROVENCALE
Yield: Makes 6 servings.
Ingredients • 3 cups cooked beef roast, cut into thin strips* • 3 cups cooked rice, cooled • 1 1/2 cups sliced celery • 1 cup sliced green onions • 1/2 cup mayonnaise • 1/2 cup sour cream • 1/2 teaspoon seasoned pepper • 1 teaspoon prepared horseradish • 1 teaspoon Dijon mustard • 1 teaspoon salt • 2 large tomatoes, cut into eighths *Or use cooked ham or pork.
Directions Combine roast beef, rice, celery and onions.
Blend mayonnaise, sour cream, pepper, horseradish, mustard and salt.
Stir into rice mixture; chill.
Garnish with tomato wedges and cucumber slices, if desired.
