TURKEY (Light & Dark Meat) MEAT LOAF

Ingredients
• 2 Ibs. skinless, dark and white turkey meat, ground • half a medium onion (1/2 cup), minced • 3 Tbsp. minced fresh parsley • 2 egg whites, or egg substitute equivalent to 1 egg • 1/4 cup skim milk • 1 tsp. dry mustard • 1/4 tsp. salt • 1/4 tsp. ground white pepper • 1/8 tsp. nutmeg • 2 slices whole wheat bread, lightly toasted, made into coarse crumbs • 2 Tbsp. ketchup • 2 Tbsp. water
Directions
1. Preheat oven to 350°.
2. Mix together ground turkey, onion, and parsley in a large bowl. Set aside.
3. In a medium bowl, whisk egg whites, or egg substitute, until frothy.
4. Add milk, mustard, salt, pepper, and nutmeg to egg. Whisk to blend.
5. Add bread crumbs to egg mixture. Let rest 10 minutes.
6. Add egg mixture to meat mixture and blend well.
7. Shape into loaf. Place in 5 x 9 loaf pan.
8. Blend together ketchup and water in a small bowl. Spread mixture on top of meat.
9. Bake until meat is no longer pink, about 90 minutes.
10. Allow meat to stand 10 minutes before slicing to serve.
