POTATO PANCAKES

Ingredients:
2 1/2 pounds Potatoes 4 Whole Eggs 2 Tablespoons Flour 1/2 tablespoon Salt 1 Tablespoon Onions -- grated 1 whole Granny Smith Apples -- minced fine
Directions:
[1) Grate Potatoes.....Squeeze out moisture.
[2) Beat Eggs...add to potatoes.
[3) Sift Flour and Salt into mixture.
[4) Add Onion and Apples.
NOTE: Make 3 inch pancakes.
