CARROT LENTIL CASSEROLE

Ingredients
~ 1 large onion, chopped ~ 1 cup carrots, finely chopped ~ ¾ cup dry lentils ~ ¾ cup brown rice, uncooked ~ ¾ cup low-fat cheese ~ ½ cup chopped green bell pepper ~ ½ tsp. dried thyme ~ ½ tsp. dried basil ~ ½ tsp. dried oregano ~ ¼ tsp. salt ~ ¼ tsp. sage ~ ¼ tsp. garlic powder ~ 1 cup low-sodium canned tomatoes, undrained ~ 1 cup low-fat, low-sodium chicken broth
Directions
1. Combine all ingredients in slow cooker.
2. Cover. Cook on High 4-5 hours.
