SPRINGTIME FRITTATA

It's easy to create a special holiday or weekend brunch. Cilantro complements the eggs, ham, zucchini, and Gruyere cheese, to make this a memorable meal.  For an added treat, substitute prosciutto for regular ham.

Prep Time: 10 minutes
Cook Time: 10 minutes
Makes 6 servings



Ingredients:
1 tablespoon olive oil
1 small yellow onion, chopped 
1 medium zucchini, cut in half lengthwise, then into 1/4-inch slices
1 cup diced ham 
6 large eggs
2 teaspoons McCormick® Cilantro Leaves  
1/4 teaspoon salt 
1/4 teaspoon McCormick® Ground Black Pepper 
3/4 cup freshly shredded Gruyere cheese 


Directions:
1. Preheat broiler. Heat oil in large, ovenproof, non-stick skillet over medium heat. Sauté onion and zucchini 2 minutes.  Reduce heat to medium-low. Add ham; cook 2 minutes more. 

2. Whisk eggs, cilantro, salt and pepper in a medium bowl to blend well. Pour over vegetables and ham in skillet. Cook without stirring until eggs are set on bottom, about 5 minutes.

3. Sprinkle with cheese. Broil until eggs are set and cheese is lightly browned. 

Kitchen Tip: Wrap the skillet handle in foil if your skillet is not ovenproof.
