(Edible Cactus)Prickly Pear Cactus Medicine: Treatments for Diabetes, Cholesterol, and the Immune System by Ran KnishinskyServes 22 tablespoons finely chopped onion1 tablespoon oil or butter2 tablespoons diced nopal (cactus)4 eggs, beaten 1 tablespoon water Sea salt and pepperIn a heavy pan over medium heat, saute the onion in the oil or butter until transparent.Add the nopal and heat thoroughly. Beat the eggs and water. Reduce the heat to low, and after the frying pan has cooled slightly, add the eggs and scramble. Season with the salt and pepper to taste. Some persons may prefer to use high-oleic safflower oil instead of butter.
