CONFETTI EGGS AND RICE

Yield: Makes 8 servings


Ingredients
• 12 eggs, slightly beaten
• 2 cups cooked rice
• 1 medium onion, chopped
• 1 cup shredded carrots
• 1 cup shredded zucchini
• 1 cup sliced mushrooms
• 1 cup (4 ounces) shredded Cheddar cheese
• 1 cup (4 ounces) shredded Monterey Jack cheese
• 1 cup light cream
• 1 teaspoon salt
• 1 teaspoon ground black pepper


Directions
Combine eggs, rice, onion, carrots, zucchini, mushrooms, cheese, cream, salt and pepper in bowl; mix well. 
 
Transfer mixture to buttered 9x13-inch baking pan. Bake at 400 degrees 20 to 25 minutes or until eggs are set and top is golden.
