ROOT BEER CAKE

Fix-it And Enjoy-it Cookbook

Makes 6 servings
Prep Time: 20-25 minutes
Baking Time: 30-35 minutes
Cooling Time: 1 hour



Ingredients:
• 1 cup sugar
• 1/2 cup butter, softened
• 1/2 tsp. vanilla
• 2 eggs
• 2 cups flour
• 1 Tbsp. baking powder
• 1 tsp. salt
• 2/3 cup root beer

Frosting:
• 1/4 cup butter, softened
• 1/8 tsp. salt
• 2 cups confectioners sugar
• 2-4 Tbsp. milk
• 1/3 cup root beer, chilled


Directions
1.
In a large electric mixer bowl, combine all cake ingredients and blend on low speed. Increase to medium speed and beat for another 3 minutes.

2. Pour into a greased and floured 8 x 12 baking pan and bake at 375° for 30-35 minutes.

3. To make frosting, beat together butter, salt, confectioners sugar, and milk in a medium-sized bowl. Blend in enough root beer to make frosting spreadable.

4. Spread on cooled cake.
