PEAR MARMALADE

10 pounds pears
2 1/2 lemons
2 1/2 oranges
7 1/2 pounds sugar


Wash pears, cut in half and remove the cores.

Quarter the lemons and oranges (cut the ends off)

Put all through a food grinder.

Put in a pot and stir in sugar thoroughly, while bringing to a boil.

Reduce heat, simmer for 45 minutes, stirring frequently.

Cook until shiny and almost transparent.

Place in sterilized jars and seal.

Makes about 8 pints.
