CRANBERRY KETCHUP

The Complete Vegan Kitchen
Most dried fruits, including blueberries, papaya, and apricots, will work in this recipe, although I wouldn't try it with dates or figs. Different fruits may require some seasoning adjustments.
Makes about 2 cups.



Ingredients

• 1 1/2 cups dried cranberries or cherries
• 1/2 cup cranberry juice
• 1/2 cup orange juice
• 2 tablespoons balsamic vinegar
• 2 tablespoons Succanat or brown sugar
• 1/8 teaspoon ground allspice
• 1/4 teaspoon ground ginger
• 1 shallot, minced


Directions
Combine all the ingredients in a small saucepan and bring to a boil over medium-high heat.

Lower the heat to medium and simmer for 20 minutes or until the cranberries are very soft.

Let the mixture cool, and then puree it.

Adjust the seasoning with salt and sugar and the consistency with water or orange juice.
