CACTUS CONDIMENT

Prickly Pear Cactus Medicine: Treatments for Diabetes, Cholesterol, and the Immune System by Ran Knishinsky

Serves 1-2

1/4 cup chopped onion (Spanish or green or a combination)
Safflower oil, for frying
1/4 cup nopal
3 tablespoons red chili paste
1/2 cup water


Saute the onion in the oil until transparent.

Add the nopal and fry for about 1 minute.

Add the red chili paste and water.

Simmer until the pads are well saturated with sauce.

Use as a sauce for a meat or tofu dish.
