AIOLI

Serves 4
Ingredients • 2 egg yolks • 3 garlic cloves, finely chopped • scant 1/2 cup olive oil • lemon juice, strained, to taste • salt and pepper
Directions
Beat the egg yolks with the garlic in a bowl.
Gradually add the olive oil, as if making mayonnaise.
Season with salt, pepper and a few drops of lemon juice to taste.
This sauce can also be made in a food processor.
