Ingredients• 1 cup uncooked long grain rice • 1 3/4 cup chicken broth • 1/2 teaspoon salt • 1/8 teaspoon ground saffron • 1 tablespoon butter, melted • 3 tablespoons fresh lime juice • 1 tablespoon chopped cilantro • salt and pepper to taste DirectionsCombine rice, broth, salt and saffron in 2-quart saucepan. Heat to boiling; stir once or twice. Reduce heat; cover and simmer 15 minutes or until liquid is absorbed. Stir in butter, lime juice and cilantro. Season to taste with salt and pepper.
