ISLAND-STYLE RICE AND BEANS
Serves 6-8
1 16-oz. can kidney beans, drained 3 cups water 1 16-oz. can coconut milk 2 cups rice 1 clove garlic, minced 1 teaspoon salt 1/2 teaspoon ground black pepper 1/2 teaspoon crushed dried thyme 1/2 teaspoon hot pepper sauce
Cooking Directions In large saucepan, combine all ingredients and bring to boil; reduce heat and simmer for 20-25 minutes, until all liquid is absorbed.
Stir well and serve hot.
A spicy side dish for a Caribbean feast.
