LEMON PEPPER CHICKEN

You've got to try this white barbecue sauce to believe it!

2 tsp. olive oil
1/3 cup minced onion
1 clove garlic, minced
1-1/2 cup applesauce
1/2 tsp. ground black pepper
1/4 tsp. paprika
1/4 tsp. red pepper flakes
1/4 tsp. poppy seeds
1 lemon, juiced and zested
apple juice and water
4 chicken breasts, boned and skinned


Heat olive oil in a medium saucepan.

Add onion and garlic. Saute for five minutes or until soft. Reduce heat.

Add applesauce. Stir well.

Add pepper, paprika, red pepper flakes, poppy seeds and lemon juice and zest.

Simmer uncovered for 20 minutes, stirring occasionally. If mixture is too thick, add a few tablespoons of apple sauce or water to thin.

Preheat grill. Grill chicken for seven minutes over hot coals. Brush with barbecue sauce. Cook five minutes. Turn meat and baste again. Cook five more minutes or until chicken is cooked through, but not dry.

Remove from grill. Bias slice cooked chicken; fan slices on a plate, and serve with additional sauce.
