PRESERVED GINGER
A curious old recipe for preserved ginger:
"Wash ginger roots and boil them for twenty-four hours.
Soak them for a day in salt water.
Wash the roots again and dry them in the sun.
Cook the roots half a day longer with an equal weight of sugar and let stand in jars for several days.
Boil once more then seal in jars."
