CHICKEN WITH HORSERADISH

4 Tbsp. Horseradish 2 Tbsp. Olive oil 1 Tbsp. Dijon mustard 2 Tbsp. Minced onion 1 Clove Garlic, finely minced 1/2 Tsp. Thyme 1/2 Cup Chopped cashew nuts 1/2 Cup White wine 4 Boneless skinless chicken breast halves Salt to taste Paprika
In a small bowl, mix together horseradish, mustard, onion, garlic, thyme and cashew nuts.
In a casserole that just fits the 4 chicken breasts in a single layer, pour white wine.
Spread the chicken breasts with the horseradish mixture.
Cover and bake in a preheated 350º oven for 25 minutes, uncover and bake for another 10-15 minutes.
