Dressing 1/2 cup vinegar 1/2 cup vegetable oil of choice 1/2 cup raw sugar 1 teaspoon salt 1/2 teaspoon pepper
Salad 1 cup nopales, cut in 1/4 -by- 1-inch strips and parboiled 1 cup red bell pepper, cut the same and parboiled 1/2 to 3/4 cup onion rings, sliced very thin
Mix the dressing in a blender or mixer until the sugar is thoroughly dissolved.
Add the dressing to the vegetables in a bowl, cover, and refrigerate.
The salad will keep for several days.
