BLACK BEAN VEGGIE BURGERS
Serves 2. These burgers are a healthy, low-fat alternative to traditional burgers. Recipe from: Look, Dude, I Can Cook!; Four Years of College Cooking Made Easy by Amy Madden
Ingredients • 1 15- to 16-ounce can black beans, rinsed, drained • 1/3 cup chopped red onion • 1/3 red bell pepper chopped • 1/3 cup canned corn drained • 1/2 cup dry breadcrumbs • 2 tablespoons plus ½ cup of bottled chunky salsa • 1 teaspoon ground cumin • 1/2 teaspoon hot pepper sauce (such as Tabasco) • Salt and pepper • 2 whole wheat buns
Directions In a medium bowl, mash ¾ of the beans.
Add the onion, red bell pepper, corn, breadcrumbs, 2 tablespoons salsa, cumin and hot sauce. Season with salt and pepper. Mix together well and then add the rest of the black beans. Gently mix.
Rub hand with a little olive oil and make 2 4-inch diameter patties.
Rub grill with oil and grill for about 3 minutes per side or put a little oil in a skillet over medium heat, cook for 3 minutes per side. Transfer burgers to bottom halve of bun, top each burger with ½ cup salsa and place top on and serve.
Variation: Dip black bean patties in seasoned breadcrumbs and follow instructions to cook in a skillet.
