VEGGIE BURGERS

Makes 12-14 servings Prep Time: 20 minutes (after soaking and cooking) Cooking Time: 8-10 minutes
Ingredients
• 1 cup dry oats • 1 cup cooked brown rice • 1/2 cup dry lentils, soaked and cooked • 1/2 cup dry black beans, soaked and cooked • 1/2 cup dry black-eyed peas, soaked and cooked • 1/2 cup salsa • 1/2 cup chopped onions • half a green pepper, chopped • half-square of tofu, at room temperature • 4-oz. pkg. cream cheese, softened • cooking oil
Directions
1. Mix all ingredients together and shape into 12-14 patties.
2. Brown on both sides in a skillet in enough oil to cover the bottom of the pan.
