SHRIMP COCKTAIL, HONEY DATIL

Yield: 6 servings.


1/2 cup Florida honey
2 tablespoons paprika
2 pounds large (16/20 count or larger) Florida shrimp, peeled and deveined
1 tablespoon chopped Florida datil pepper (or other hot pepper)
1 teaspoon salt
2 cups diced (cut into 1-inch pieces) Florida honeydew melon
2 cups diced (cut into 1-inch pieces) Florida mangoes
  
 
Combine honey, paprika, pepper and salt in a large skillet.
Heat over medium-high heat.
Add shrimp. Simmer 4 to 5 minutes, stirring occasionally, or until shrimp are opaque throughout.
Remove shrimp from liquid and chill; reserve honey mixture.
Alternate shrimp with melons and mangoes on wooden skewers.
Place in a glass container and pour honey mixture over shrimp, melons and mangoes.
Refrigerate and serve cold.
