GRANOLA, PISTACHIO GRANOLA
Yield: 5 cups.
Ingredients • 2/3 cup packed brown sugar • ¼ cup apple juice • 2 cups regular oats • 2/3 cup chopped pistachios • 2/3 cup All Bran cereal • 2/3 cup raisins • ½ tsp ground cinnamon • ¼ tsp salt
Directions Spray a large nonstick skillet with cooking spray. Combine sugar and apple juice in skillet and cook over medium-high heat for 3 minutes or until sugar dissolves, stirring frequently. Stir in oats and remaining ingredients; cook 5 minutes or until granola is lightly browned, stirring frequently.
Spread granola mixture on a large cookie sheet lined with aluminum foil (sprayed with cooking spray). Allow to cool slightly and place in convection oven for 3-5 minutes to allow granola to harden. Remove from oven and allow to cool completely. Once cool, store in an airtight container for up to a week.
