DRIED FRUIT & NUT GRANOLA
Healthy Eating for Pregnancy by Amanda Grant This is easy and quick to make, and will last for a good few breakfasts; just keep it in an airtight jar. To make the granola toddler or baby-friendly, puree in a food processor to a powder. However, avoid giving it to babies or toddlers with nut allergies. Oats, wheat germ, and dried fruit are all rich in fiber, which helps with digestion, and nuts and seeds are a good source of protein. Dried cranberries help to fight bladder, kidney, and urinary-tract infections. Makes: 6-8
Ingredients • 1/3 cup sunflower seeds • 1/3 cup almonds, roughly chopped • 1/2 cup whole hazelnuts or cashews, roughly chopped • 2/3 cup coconut chips (available from supermarkets) or desiccated coconut • 2 cup rolled oats • 4 tbsp wheat germ • 2/3 cup each dried apricots, chopped, and raisins • 1/2 cup dried cranberries or blueberries • pinch of freshly grated or ground nutmeg • 1/2 tsp cinnamon
Directions 1. Dry-fry the seeds and nuts in a skillet over a medium heat, stirring constantly, until they begin to brown—this only takes a couple of minutes, Transfer to a bowl.
2. Dry-fry the coconut chips or desiccated coconut .for a minute until lightly golden. Add to the bowl of seeds and nuts. Add all the other ingredients to the bowl and mix everything together.
3. Serve with your choice of milk, yogurt, or fruit juice and fresh fruit.
