DUTCH APPLE/POTATO SALAD
This is an official 5 A Day recipe Makes 8 servings.
Ingredients:
• 2 red apples, cored and diced with skin on • 2 cups cooked beef, diced • 1 large dill pickle, diced • 4 cups cooked potatoes, diced • 1 onion, diced • 1/4 cup low fat mayonnaise • 1/4 cup oil and vinegar dressing
Directions:
Mix ingredients. Serve over lettuce.
Garnish with pickled vegetables or chutney if desired.
