ROMAN STYLE MARINATED BROCCOLI

Vegan Italiano by Donna Klein

Called flammifero, which means matches, this marinated appetizer from Rome typically calls for raw broccoli stalks cut into thin, matchstick-size pieces. Ready-made broccoli slaw is an ideal time-saving substitute.
Makes 4 To 6 Appetizer Or Side-Dish Servings



Ingredients
• 12 ounces broccoli slaw
• 6 ounces plum tomatoes (about 3 medium), chopped
• 1/4 cup extra-virgin olive oil
• 1 tablespoon red wine vinegar
• 1 tablespoon fresh lemon juice
• 1 teaspoon sugar
• 1/4 teaspoon coarse salt, or to taste
• Freshly ground black pepper, to taste


Directions
Place all ingredients in a large bowl; toss well to combine.

Cover and refrigerate 3 hours or up to 2 days, and serve chilled.
