ROMAN STYLE GREEN BEANS

Old Farmer's Almanac Everyday Cookbook

Makes 6 servings.


Ingredients


• 1 pound fresh green beans
• 3 tablespoons olive oil
• 1 medium yellow onion, sliced into thin rounds
• 1/2 green bell pepper, cored and sliced into thin strips
• 1 clove garlic, minced
• 1 cup peeled, chopped Roma tomatoes, fresh or canned with juices
• 1 bay leaf
• 1 teaspoon salt
• 1/4 teaspoon freshly ground black pepper
• 1 tablespoon chopped fresh chervil (or 1 tsp dried)


Directions

Wash the beans and snap off the ends; set them aside.

In a large skillet or saucepan, heat the oil and saute the onion until translucent.

Add the green pepper, garlic, tomatoes, and bay leaf. Simmer, uncovered, for 20 minutes, or until the sauce thickens.

Add the salt, pepper, chervil, 1/3 cup of water, and the green beans.

Cover and cook for 20 minutes, or until the beans are tender. (Add more water if necessary.)
