QUEENS CHICKEN SALAD This salad is said to have been the great favorite of the wife of Charles I of England, Queen Henrietta Maria. Recipe for Queen’s Chicken Salad Cooked chicken is sliced into scallops and mixed with anchovy fillets with a touch of pepper, chopped celery, and a sauce made from a blend of vinegar and sauce Mayonnaise. The royal salad is served garnished with capers and sliced hard-boiled eggs.
