Potato Salad from Charlie’s Restaurant
1 Quart Boiled Potatoes -- diced 1/3 Teaspoon Salt 1/4 teaspoon White pepper 1/4 Cup Scallions -- chopped 1 Tablespoon Pimiento -- chopped 2 Whole Eggs, Hard-Boiled -- chopped 1 Cup Mayonnaise 2 Tablespoons Celery -- diced 1/2 Cup Pickle relish 1 Tablespoon Dijon mustard
Cook potatoes.
Combine with remaining ingredients.
Chill 2 hours.
