POTATO SALADS

Preparation
To prepare potatoes for potato salad, cook potatoes (1-inch pieces), covered, in 2 inches boiling water in medium saucepan for 10 to 12 minutes or until just tender; drain. Add dressing to potatoes while still warm. Add chopped vegetables (such as celery, onion and pickles) and chopped hard-boiled eggs; toss to combine. Season with salt and pepper, as desired.

French Twist
Microwave potato cubes, then make a tasty French-style potato salad by tossing with chopped parsley, sliced celery, chopped green onions and prepared vinaigrette.

Deli Potatoes & Sausage Salad
Add sliced smoked sausage to your potato salad for a main dish that's great for summer time picnics.

Potato Croutons
Brown cubed, cooked potatoes in a little oil; drain on paper towels. Season "croutons" with salt, pepper, and dried herbs. Sprinkle over dressed greens for an unusual salad topping. 

How to Make the Best Potato Salad

Toss cooked cut-up potatoes with salad dressing while still warm for maximum flavor pick-up.

How to Make a Faster Potato Salad
Cut up potatoes before boiling to speed up cooking time.
Use pre-cut refrigerated potatoes to cut down prep time.
When making baked potatoes, bake extra. Refrigerate leftover potato and use for a salad.
