LIME TURKEY SALAD
Yield: Makes 6 servings.
Ingredients • 3 tablespoons lime juice • 2 tablespoons vegetable oil • 1 tablespoon fresh chopped cilantro • 1/2 teaspoon cumin • 1/2 teaspoon salt • 3 cups cooked rice, cooled • 3/4 pound grilled turkey breast, cut into 2-inch strips (about 2 cups) • 1 medium-size red pepper, cut into strips • 1 cup julienne jicama strips* • 1/2 cup sliced green onions
Directions Combine lime juice, oil, cilantro, cumin and salt in large bowl.
Add rice, turkey, pepper, jicama and green onions; toss.
Serve chilled.
