HAWAIIAN TURKEY SALAD
Yield: Makes 6 servings
Ingredients • 3 cups cooked brown rice • 2 cups cooked turkey cubes • 1 8-ounce can pineapple chunks in juice (drain; reserve 1 tablespoon juice) • 1 8-ounce can sliced water chestnuts, drained • 1 medium unpeeled apple, cored and chopped • 1/3 cup chopped macadamia nuts* • 1/2 teaspoon salt • 1/2 cup (4 ounces) plain yogurt • Lettuce leaves • 1/4 cup shredded coconut, toasted, for garnish
Directions Combine rice, turkey, pineapple, water chestnuts, apple, nuts and salt in large bowl.
Toss lightly with yogurt and 1 tablespoon pineapple juice.
Serve on lettuce leaves; garnish with coconut. *Any type of nuts may be substituted.
