CLASSIC RICE SALAD

Yield: Makes 6 servings.

 
Ingredients
• 3 cups cooked rice, cooled
• 3 hard-cooked eggs, chopped
• 1/2 cup reduced-calorie mayonnaise
• 1/2 cup finely chopped green onions
• 1/2 cup chopped sweet pickles
• 1 (2-ounce) jar pimientos, diced (1/4 cup)
• 1 teaspoon prepared mustard
• 1/4 teaspoon ground black pepper
• Lettuce leaves
 

Directions
Combine rice, eggs, mayonnaise, onions, pickles, pimientos, mustard and pepper in large bowl.

Toss to thoroughly combine.

Serve on lettuce leaves.
