CAROUSEL RICE SALAD
Yield: Makes 6 servings.
Ingredients • 3 cups cooked rice, cooled • 1 cup grated carrots • 1 cup sliced celery • 1/3 cup sweet pickle relish • 3/4 teaspoon salt • 1/8 teaspoon ground black pepper • Lettuce leaves • 1 cup sour cream • 1/2 teaspoon sweet basil
Directions Combine rice, carrots, celery, pickle relish, salt and pepper in large bowl.
Toss lightly; chill.
Serve on lettuce leaves.
Blend basil into sour cream; spoon over salad.
