BROWN RICE OLIVE SALAD
Yield: Makes 4 servings.
Ingredients • 2 cups cooked brown rice (cooked in chicken broth), cooled to room temperature • 1/2 cup sliced celery • 1/2 cup sliced ripe olives • 1/4 cup finely diced onion • 1/4 cup finely diced red pepper • 1/4 cup bottled Italian salad dressing • Lettuce leaves
Directions Combine rice, celery, olives, onion and red pepper in large bowl.
Pour salad dressing over rice mixture; toss lightly.
Serve on lettuce leaves.
