CABBAGE SLAW WITH RAISINS, APPLES, AND PEANUTS

 

Complete Idiot’s Guide® to Grilling

Serves: 10 to 12
Prep time: 35 minutes
Serving size: 1/2 cup

Ingredients
• 1/2 cup seedless raisins
• 1/4 cup hot water
• 1 cup mayonnaise
• 2 TB. distilled white vinegar
• 1 TB. granulated sugar
• 1/2 tsp. salt
• 1/4 tsp. fresh-ground black pepper
• 1/2 large head (about 1 1/2 Ib.) cabbage,shredded
• 2 large apples, peeled, cored, and chopped
• 1/2 cup chopped salted roasted peanuts


Directions
1.
In a small bowl, soak raisins in hot water until they soften and plump, about 20 minutes. Drain thoroughly.

2. While raisins soak, in a large mixing bowl, stir or whisk together mayonnaise, white vinegar, sugar, salt, and pepper. Add cabbage, apples, peanuts, and soaked and drained raisins. Toss salad with dressing, cover, and chill. Toss salad again before serving.

Note: By putting raisins into hot water for a time, they actually rehydrate, plump up, and get soft. They also seem sweeter.
