TROPICAL SLAW
Makes 8 large servings
Ingredients • 2 cups shredded white cabbage • 1 cup shredded red cabbage • 2 cups grated carrot • 3 cups chopped celery • 1/3 cup chopped dates • 1/3 cup dried chopped pineapple • 2/3 cup lemon or vanilla low fat yogurt • 3 tablespoons fat free sweet & sour vinegar dressing • 1/2 cup dry roasted salted peanuts, chopped
Directions In a large bowl, combine the cabbage, carrots, celery, dates and pineapple.
Mix in the yogurt and vinegar dressing.
Before serving, mix in the salted peanuts.
Per serving: 155 calories, 4g protein, 5g total fat (1g saturated fat), 26g carbohydrates, 3g fiber, 1mg cholesterol, 233mg sodium.
